&lt;p&gt;You&amp;#8217;ll need:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;Olive oil&lt;/li&gt;
&lt;li&gt;2 big onions&lt;/li&gt;
&lt;li&gt;400&amp;#160;g minced chicken meat&lt;/li&gt;
&lt;li&gt;1 box crushed tomatoes/tomato sauce&lt;/li&gt;
&lt;li&gt;Salt&lt;/li&gt;
&lt;li&gt;Spaghetti/pasta (we always use wholegrain)&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Start by chopping the onion and heating the water for the spaghetti. Heat olive oil in a skillet over medium high heat. Add the onion and let it get transparent before adding the minced chicken. Cook the spaghetti as normal (I use water with olive oil and salt). When all the minced meat is thoroughly cooked you can add the tomatoes. When the sauce starts to bubble, dinner is served! We usually eat this with some mixed salad on the side. Enjoy!&lt;/p&gt;

&lt;p&gt;You&amp;#8217;ll need:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;Green salad.&lt;/li&gt;
&lt;li&gt;Tomatoes&lt;/li&gt;
&lt;li&gt;Cucumber&lt;/li&gt;
&lt;li&gt;Green/spring onion&lt;/li&gt;
&lt;li&gt;Red onion&lt;/li&gt;
&lt;li&gt;Feta cheese&lt;/li&gt;
&lt;li&gt;Couscous (wholegrain)&lt;/li&gt;
&lt;li&gt;Chicken breast (filet)&lt;/li&gt;
&lt;li&gt;Olive oil&lt;/li&gt;
&lt;li&gt;Garlic&lt;/li&gt;
&lt;li&gt;Salt&lt;/li&gt;
&lt;li&gt;Dry parsley&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Heat olive oil and chopped garlic in a skillet over medium heat. Let the garlic get golden before adding the diced chicken. Add salt and parsley. Cook until all pinkness is gone. Prepare the couscous according to the package instructions. Chop the vegetables and then mix them in a big bowl with the chicken, the couscous and the feta cheese. Bon appetit!&lt;/p&gt;

&lt;p&gt;I made this for dinner on Wednesday with marinated turkey breast and gratinated tomatoes. I&amp;#8217;ll post the recipe for the tomatoes later :-) It was a D.E.L.I.C.I.O.U.S. dinner!&lt;/p&gt;
&lt;p&gt;You&amp;#8217;ll need:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;Olive/rape oil&lt;/li&gt;
&lt;li&gt;1 big leek, sliced&lt;/li&gt;
&lt;li&gt;300 ml long-grain rice (1&amp;#160;1/4 cup)&lt;/li&gt;
&lt;li&gt;600 ml water (2&amp;#160;1/2 cup)&lt;/li&gt;
&lt;li&gt;1 vegetable bouillon cube&lt;/li&gt;
&lt;li&gt;250&amp;#160;g champignons (9 oz), sliced&lt;/li&gt;
&lt;li&gt;2 tbsp parsley, chopped&lt;/li&gt;
&lt;li&gt;1 tsp salt&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;How to:&lt;/p&gt;
&lt;ol&gt;&lt;li&gt;Heat oil in a saucepan over medium heat and add the leek. Cook until a little golden.&lt;/li&gt;
&lt;li&gt;Add the rice to the saucepan and keep frying until the rice grains are shiny/glossy.&lt;/li&gt;
&lt;li&gt;Mix the water and the bouillon cube until dissolved, and add 1/3 of it to the saucepan. Stir over medium heat until there&amp;#8217;s not bouillon left, then add the rest and let it cook by itself.&lt;/li&gt;
&lt;li&gt;Heat more oil in a skillet over medium heat and fry the champignons until golden. Add to the risotto.&lt;/li&gt;
&lt;li&gt;Add parsley and salt and stir it in.&lt;/li&gt;

&lt;p&gt;I should have posted this a LONG time ago, I&amp;#8217;m sorry, I&amp;#8217;ve been through some stuff lately, so I haven&amp;#8217;t had much time for my blog. I&amp;#8217;ve been cooking a little bit though :-) This is the recipe for an Italian &lt;em&gt;Pane Bianco&lt;/em&gt; from Tessa Kiros&amp;#8217; book &amp;#8220;&lt;em&gt;Twelve, an Italian cook book&amp;#8221;&lt;/em&gt;.&lt;/p&gt;
&lt;p&gt;You&amp;#8217;ll need:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;12&amp;#160;g active dry yeast/25&amp;#160;g fresh yeast&lt;/li&gt;
&lt;li&gt;a pinch sugar&lt;/li&gt;
&lt;li&gt;300 ml lukewarm water (1&amp;#160;1/4 cup)&lt;/li&gt;
&lt;li&gt;500&amp;#160;g fluor (18 oz)&lt;/li&gt;
&lt;li&gt; a pinch salt&lt;/li&gt;
&lt;li&gt;1 tbsp olive oil&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;How to:&lt;/p&gt;
&lt;ol&gt;&lt;li&gt;Combine yeast with sugar and a little bit of the water until dissolved.&lt;/li&gt;
&lt;li&gt;Put the fluor into a bowl and make a pit in the middle. Add the yeast mixture, salt and olive oil and mix everything well.&lt;/li&gt;
&lt;li&gt;Knead the dough until elastic and smooth, about 10 minutes. If needed, add more water or fluor.&lt;/li&gt;
&lt;li&gt;Let the dough rise in a bowl with a kitchen towel (or use my &lt;a href="http://twiningslove.tumblr.com/post/18066047315/my-best-yeast-dough-rising-trick" target="_blank"&gt;yeast dough rising trick&lt;/a&gt;) during 1,5 hours.&lt;/li&gt;
&lt;li&gt;Take the dough out of the bowl and make either one or two round breads. Put them on a fluored baking sheet and cover with a kitchen towel. Let them rise 30-60 minutes.&lt;/li&gt;
&lt;li&gt;Bake them in preheated oven at 200 degrees C/400 degrees F for 30-40 minutes. They should be golden and hard/crispy on the outside. If you knock on it, it should sound hollow.&lt;/li&gt;

Yesterday was a work wow day and a sleep wow day. I worked for more than 11 hours, then I got home at 07.30 PM, had dinner and passed out in my bed. I didn&amp;#8217;t wakeup until 10 PM because my mom wanted to talk to my dad. Then why did she call me? I went to the bathroom to take out my contact lenses and then I passed out in my bed again. Today I got up at 07.30 AM, which means I slept for almost 12 hours, apart from the conversation I had with my mom of course. Today I&amp;#8217;ve had the most wonderful morning with a cup of cardamom coffe with milk, homemade bread and a little The Sims 3 playing. Perfect. And when I had to wait 10 minutes for the metro, I realized how beautiful the day was:&lt;/p&gt;

It&amp;#8217;s written by Tessa Kiros who&amp;#8217;s one of the most international persons I&amp;#8217;ve heard of. I don&amp;#8217;t remeber exactly where she is from, but her mother is from Finland and I think her father is half something and half something else. Tessa was raised in another country and I think her grandmother is greek. Now, Tessa lives in Italia because she&amp;#8217;s married to an Italian man. I would love to have so many nationalities represented in my family, or in my life for that matter! It&amp;#8217;s so inspiring! It makes me want to make food from all over the world!&lt;/p&gt;
&lt;p&gt;Well, the cook book I bought is called &amp;#8220;Twelve, a Tuscan Cook Book&amp;#8221; and it has that title because Tessa writes about one whole year in Tuscany in this book. She starts with January and it all ends in December. Every month has its special recipes, for example November, because in November they have to start testing that year&amp;#8217;s olive oil, so they use it a lot. I&amp;#8217;ve always loved Italian food (I&amp;#8217;ve tasted more than pizza and spaghetti), especially &lt;em&gt;risotto&lt;/em&gt;, &lt;em&gt;pesto&lt;/em&gt; and &lt;em&gt;bruschetta con pomodoro&lt;/em&gt;. And you also have the variations of pasta, like Tortellini, Ravioli, Gnocchi, Tagiliatelle etc. I LOVE pasta, but I don&amp;#8217;t eat it so often though. I really miss eating white pasta, because I normaly eat the wholemeal kind :-( It&amp;#8217;s boring&amp;#8230;&lt;/p&gt;
&lt;p&gt;The cook book is full of mouth watering recipes, but I haven&amp;#8217;t tried out anyone yet. I really want to make an Italian bread that&amp;#8217;s calledpane bianco, which means white bread. It&amp;#8217;s just a normal bread, but without salt because it has to balance the salt in the Italian prosciutto hams. That&amp;#8217;s what the recipe said. The bread can be used to make bruschetta and to make a bread soup that I want to make too!&lt;/p&gt;
&lt;p&gt;I&amp;#8217;ll post recipes from the book as I make the different dishes, so you should be prepared for some Italian madness on my blog in the near future, haha, yummy!&lt;/p&gt;

&lt;p&gt;Ingredients:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;5 small apples&lt;/li&gt;
&lt;li&gt;3/4 cup water&lt;/li&gt;
&lt;li&gt;1/8 cup fructose (of course you can use sugar if you like!)&lt;/li&gt;
&lt;li&gt;All the cinnamon you want&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;How to:&lt;/p&gt;
&lt;ol&gt;&lt;li&gt;Peel, core and chop the apples. I like to chop them like dices.&lt;/li&gt;
&lt;li&gt;Mix apples, water and fructose in a saucepan. Add some cinnamon and let it all cook over medium heat for 20-30 minutes. Add cinnamon more times if you like. I think I ended up adding at least 10 tsp of cinnamon when I doubled the recipe yesterday, yummy!&lt;/li&gt;
&lt;li&gt;Take the saucepan away from the heat and allow to cool. When the apples are lukewarm or cold, you can mash them with a potatoe masher or a fork. I haven&amp;#8217;t tried to do it with a fork, but it may work :-)&lt;/li&gt;

&lt;p&gt;I&amp;#8217;m kind of angry today because it&amp;#8217;s my second Saturday in a row working and all I want is to sleep and to wake up with my boyfriend. That&amp;#8217;s sad. I got up at 7.30 AM and found out that we didn&amp;#8217;t have bread. Well, great start. So, I took the frozen pancakes from last Sunday out of the freezer and defrosted them all in the microwave. Then I toasted a few to have them for breakfast. And they were really good actually! I think I&amp;#8217;ve read on the internet that pancakes are bad if you don&amp;#8217;t eat them right away, but I don&amp;#8217;t think that&amp;#8217;s true, because they weren&amp;#8217;t so bad this morning. Last Sunday I went to the gym before anyone got up, but when I arrived afterwards, everyone was eating breakfast and I was going to make pancakes. Thursday will be my last day here and on Friday I&amp;#8217;ll start working in a kindergarden, woho :-) Should be nice doing something else than sitting on a chair everyday. &lt;p&gt;I have to admit that this was my first time making American pancakes. When we say pancakes here in Norway, we usually mean the french crepes. We make very thin pancakes which are bigger than the American ones. For us, the American pancakes are small and chubby, but we like them as well! Maybe even more :-P&lt;/p&gt;
&lt;p&gt;The &lt;a href="http://allrecipes.com/recipe/fluffy-pancakes-2/detail.aspx" target="_blank"&gt;recipe&lt;/a&gt; I followed is from &lt;a href="http://allrecipes.com/" target="_blank"&gt;AllRecipes.com&lt;/a&gt; and was submitted by &lt;em&gt;kris&lt;/em&gt; a couple of years ago (I think). This was my first time making it, so I chose not to experiment too much this time. I only doubled the amount of baking soda without knowing&amp;#8230; I wanted the pancakes to be perfect, at least good and fluffy :-) And I really liked them! So did my boyfriend, who I woke up today, 15 minutes before leaving for work, to eat pancakes for breakfast with me. I&amp;#8217;m so happy he actually got out of bed at 8 AM to be with me :-) Even though he didn&amp;#8217;t have to get up early!&lt;/p&gt;
&lt;p&gt;Ingredients:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;3/4 cup milk&lt;/li&gt;
&lt;li&gt;2 tbsp white vinegar&lt;/li&gt;
&lt;li&gt;1 cup all-purpose fluor&lt;/li&gt;
&lt;li&gt;2 tbsp white sugar (I&amp;#8217;ll try to use brown sugar next time!)&lt;/li&gt;
&lt;li&gt;1 tsp baking soda&lt;/li&gt;
&lt;li&gt;1 tsp baking powder&lt;/li&gt;
&lt;li&gt;1 tsp salt&lt;/li&gt;
&lt;li&gt;1 egg&lt;/li&gt;
&lt;li&gt;2 tbsp butter, melted&lt;/li&gt;
&lt;li&gt;Oil/butter/cooking spray&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;How to:&lt;/p&gt;
&lt;ol&gt;&lt;li&gt;Mix the milk and vinegar in a medium bowl and let it &amp;#8220;sour&amp;#8221; for 5 minutes.&lt;/li&gt;
&lt;li&gt;Mix fluor, sugar, baking soda, baking powder and salt in another (small) bowl.&lt;/li&gt;
&lt;li&gt;Add egg and butter to the &amp;#8220;soured&amp;#8221; milk and pour the fluor mixture into the wet ingredients afterwards. Whisk until lumps are gone. This is the last time you should be stirring the batter. If you stir it more after the rest or while cooking the pancakes, they won&amp;#8217;t be that fluffy!&lt;/li&gt;
&lt;li&gt;Leave the batter to rest for about 20-30 minutes. This isn&amp;#8217;t really necessary, but it makes the pancakes more fluffy!&lt;/li&gt;
&lt;li&gt;Heat a skillet over medium heat and add a little oil, butter or cooking spray when it&amp;#8217;s hot. Then pour the batter (1/4 cupfuls for each pancake, says the recipe, but I just poured it into the skillet using a soup ladle/scoop[?]). Cook the pancakes until bubbles appear on the surface or until golden, then flip and cook them until golden on the other side.&lt;/li&gt;
